Lamb Preparation

Prepare the Lamb
In a large bowl, combine the olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, lemon juice, and water. Mix well to form a marinade.

Marinate the Lamb
Place the lamb shoulder into the marinade, ensuring it is well-coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Slow Cook the Lamb
Transfer the marinated lamb to a slow cooker. Cook on low for 6-8 hours, or until the meat is tender and easily pulls apart with a fork.

Prepare the Cucumber
Grate the cucumber using a box grater and squeeze out excess moisture using a clean kitchen towel.

Assembling the Gyro

Slice the Lamb
Once the lamb is cooked, remove it from the slow cooker and let it rest for 10 minutes before slicing it thinly.

Prepare the Pita
Warm the pita bread in a dry skillet or microwave until soft.

Place slices of lamb in the center of each pita. Top with tzatziki sauce, chopped tomatoes, thinly sliced red onion, and lettuce.
