Preparing the Mousse

Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until completely melted and smooth. Remove from heat and let cool slightly.

Whisk Eggs and Sugar
In a separate mixing bowl, whisk the large eggs and granulated sugar together until the mixture is light and fluffy, about 5-7 minutes. The mixture should have doubled in volume.

Whip the Cream
In another bowl, whip the heavy cream until soft peaks form. Be careful not to over-whip; you want it to be smooth and creamy.

Fold in the Cream
Gently fold the whipped cream into the chocolate mixture in three additions. Start by folding in one-third of the whipped cream to lighten the mixture, then fold in the remaining whipped cream until no white streaks remain.

Chill the Mousse
Spoon the mousse into serving dishes or cups and refrigerate for at least 2 hours, or until set.
