    Trim excess hard fat from the brisket, leaving about 1/4-inch of fat cap for flavor and moisture. Pat brisket dry with paper towels and allow to rest at room temperature while preparing the rub (30–45 minutes).

    Lightly coat the entire surface of the brisket with the yellow mustard to help the rub adhere. In a small bowl combine kosher salt, coarsely ground black pepper, garlic powder, onion powder, and smoked paprika. Rub the spice mix evenly over all sides of the brisket, pressing gently so it adheres.

    Prepare Smoker

    Preheat your smoker to 225°F (107°C). If using a grill, set up for indirect heat. Add oak or hickory wood chunks to produce a steady, mild smoke. Stabilize temperature at 225°F before placing brisket in.

    Smoke the Brisket

    Place the brisket fat-side up on the smoker grate. Insert a probe thermometer into the thickest part of the flat. Smoke until the internal temperature reaches 165°F (74°C), about 6–7 hours depending on size and smoker consistency. Maintain 225°F and replenish wood/charcoal as needed.

    Wrap and Continue Cooking (Texas Crutch)

    When the brisket hits 165°F and has a good dark bark, wrap it tightly in butcher paper or aluminum foil to speed through the stall. Return to the smoker and continue cooking until the internal temperature is 200–203°F (93–95°C) and the probe slides in with little resistance, about 2–4 more hours.

    Remove the wrapped brisket and rest in a cooler or insulated container for at least 1 hour (up to 2 hours). Resting lets juices redistribute and makes slicing easier.

    Slice/Shred

    Unwrap and separate the point and flat if desired. For tacos, trim off overly fatty pieces and slice the brisket thinly across the grain or pull into bite-sized shreds with forks, keeping moist pieces and bark for texture.

    While the brisket rests, combine beef broth, apple cider vinegar, brown sugar, and Worcestershire sauce in a small saucepan over medium heat. Bring to a gentle simmer and reduce by about one-third, about 6–8 minutes. Stir in butter until melted and whisk to glaze. Season with salt and black pepper. Use sauce to moisten trimmed brisket pieces or to serve on the side.

    Warm Tortillas

    Lightly brush a skillet or comal with the vegetable oil and heat over medium-high. Warm each corn tortilla 20–30 seconds per side until pliable and slightly charred spots appear. Keep tortillas warm wrapped in a clean kitchen towel.

    Reheat Brisket for Tacos

    If brisket has cooled, reheat in a skillet over medium heat with a few tablespoons of the finishing sauce or reserved brisket au jus until warm and slightly glazed, about 3–5 minutes. Alternatively, warm in a 300°F (150°C) oven covered for 15–20 minutes.
