Whisk eggs
Crack the 6 eggs into a medium bowl. Add 3 tablespoons whole milk, 3 teaspoons salt, 1 teaspoon freshly ground black pepper, and 1 teaspoon hot sauce if using. Whisk vigorously until mixture is uniformly pale and slightly frothy (about 30–45 seconds). Set aside.

Preheat pan
Place a nonstick or heavy skillet over medium heat. Add 1 tablespoon olive oil and 1 tablespoon unsalted butter. Allow butter to melt and foam but not brown (about 30 seconds).

Add peppers & spinach
Add the diced red bell pepper and chopped spinach. Cook another 1–2 minutes until spinach wilts and pepper softens but still has a little bite. Stir in the thinly sliced scallions and remove the pan from heat briefly.
Cook eggs

Temper and add eggs
Return the pan to low–medium-low heat. Add the remaining 1 tablespoon butter to the pan and let it melt. Pour the whisked eggs over the warmed vegetables. Wait 10–15 seconds for the edges to set.

Scramble gently
Using a silicone spatula, gently push the set edges toward the center while tilting the pan to let uncooked egg flow to the edges. Continue this gentle folding motion, forming large soft curds. Cook slowly — total time about 3–5 minutes — until eggs are mostly set but still slightly glossy and creamy.

Add cheeses
When eggs are about 90% cooked, scatter the 2 tablespoons cubed cream cheese and 3/4 cup grated sharp cheddar evenly over the eggs. Fold gently so the cheese melts into the curds but the scramble remains soft. Remove pan from heat as soon as cheese is melted and eggs are soft but not runny.
