Prepare chicken
Pat the chicken breasts dry with paper towels. If breasts are unevenly thick, butterfly them or pound gently to an even thickness about 3/4 inch for even cooking.

Make marinade
In a medium bowl whisk together extra-virgin olive oil, fresh lemon juice, minced garlic, Dijon mustard, paprika, ground black pepper, and salt (if using) until emulsified.

Marinate chicken
Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, rub so all pieces are coated. Refrigerate for 30 minutes to 2 hours. For best flavor and low sodium control, avoid marinating longer than 4 hours.

Preheat grill
Preheat an outdoor gas or charcoal grill to medium-high (about 400°F / 200°C). If using a grill pan or cast-iron pan on the stove, preheat over medium-high heat and lightly oil the grates or pan.

Grill chicken
Remove chicken from marinade and let excess drip off. Place breasts on the hot grill. Grill 5 to 7 minutes per side, flipping once, until an instant-read thermometer inserted into the thickest part reads 165°F (74°C). Total cook time will be 10–14 minutes depending on thickness. Avoid pressing down on the chicken.

Rest
Transfer chicken to a clean plate and tent loosely with foil. Rest for 5 minutes to allow juices to redistribute.

Serve
Slice or serve whole. Sprinkle chopped fresh parsley over the chicken and serve with lemon wedges for squeezing. Adjust salt at the table if desired, but keep low-sodium by default.
