Finishing & Serving
Method
Chicken & Seasoning
- 1
Prepare chicken
Preheat oven to 425°F (220°C). Pat the chicken breasts dry with paper towels. If breasts are thick, slice each horizontally to make two thinner cutlets (about 1/2 inch thick) or pound gently between plastic wrap to an even thickness. This helps them cook quickly and evenly.
- 2
Season
In a small bowl, combine olive oil, Italian seasoning, garlic powder, smoked paprika, salt, and black pepper. Rub the mixture evenly over both sides of each chicken breast.
- 3
Assemble Pizza Toppings
- 4
Arrange sauce
Place seared chicken breasts in the ovenproof skillet (or transfer to a baking dish). Spoon 2–3 tablespoons (about 1/4 cup total) of the sugar-free pizza sauce onto each chicken breast and spread it to cover the top evenly but leaving the edges.
- 5
Add vegetables and pepperoni
Sprinkle the sliced red and green bell peppers and thinly sliced red onion evenly over the sauced chicken. Add sliced pepperoni and black olives if using. Lightly sprinkle crushed red pepper flakes over the toppings for a little heat.
- 6
Cheese
Evenly distribute the shredded mozzarella and provolone over the toppings, creating a thin, even layer so the chicken heats through and the cheese melts without adding too many carbs.
Bake & Finish
- 7
Bake
Transfer the skillet or baking dish to the preheated 425°F oven. Bake 10–14 minutes, until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and starting to brown. Thinner cutlets will be on the shorter end of the time range.
- 8
Broil for color (optional)
If you want more browned cheese, switch the oven to broil for 1–2 minutes—watch carefully so it doesn't burn.
- 9
Garnish & Serve
Remove from the oven and let rest 3 minutes. Sprinkle grated Parmesan over each breast and garnish with fresh basil leaves. Serve with lemon wedges on the side to squeeze over the chicken if desired.
