Red Layer (Strawberry)

Make strawberry purée
Place the chopped strawberries, 2 tablespoons granulated sugar, 1 teaspoon lemon juice, and 2 tablespoons cold water in a blender or food processor. Blend until smooth, about 20–30 seconds. Taste and adjust sweetness if needed. If you want a very smooth texture, press the purée through a fine mesh sieve into a bowl to remove seeds; otherwise keep as-is for a rustic texture.

Pour or spoon about 1/3 of the strawberry purée into each popsicle cavity to create the red layer. Tap the mold gently on the counter to release any air bubbles and level the layer. Freeze uncovered until firm around the edges and slightly set on top, about 30–45 minutes (not fully frozen — you want it set enough to support the white layer).
White Layer (Vanilla Yogurt)

Prepare vanilla yogurt layer
In a small bowl whisk the Greek yogurt, 2 tablespoons whole milk, 1 tablespoon powdered sugar, and 1 teaspoon vanilla extract until smooth and slightly pourable. If the mixture is too thick, add another teaspoon of milk at a time until it reaches a thick but pourable consistency.

Remove the strawberry layer from the freezer once it's set (30–45 minutes). Pour or spoon about 1/3 of the yogurt mixture into each mold on top of the strawberry layer. Use a spoon to gently spread it and avoid breaking the strawberry layer. Tap the mold gently. Return molds to the freezer and freeze until the yogurt layer is firm to the touch, about 30–40 minutes.
Blue Layer (Blueberry)

Make blueberry purée
Combine blueberries, 1 tablespoon granulated sugar, 1 teaspoon lemon juice and 1 tablespoon cold water in a blender or food processor. Blend until smooth, about 20–30 seconds. For a smoother finish, strain through a fine mesh sieve to remove skins. Taste and add a pinch more sugar if needed.

Once the yogurt layer is firm, pour or spoon the blueberry purée into each mold to fill to the top. Tap molds gently to remove bubbles and level the surface. Insert popsicle sticks (if your mold requires the top to be covered before sticks go in, follow your mold instructions). Freeze the popsicles until completely solid, at least 4–6 hours or overnight for best results.

If desired, lightly spray molds with nonstick spray before adding the first layer to help with release (wipe excess so it doesn't alter flavor).

Optional garnish: For a festive look, press a few fresh blueberries into the top of each popsicle just before the blueberry layer sets if using whole blueberries, or sprinkle edible stars/sprinkles on the yogurt layer before adding the blue layer.
