Preheat and prepare pan
Preheat oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper or lightly grease a 9x5-inch loaf pan. Set aside.

Sauté aromatics
Heat 1 tablespoon olive oil in a small skillet over medium heat. Add the finely diced onion and a pinch of salt. Sauté until translucent and just beginning to brown, about 5–7 minutes. Add the minced garlic and sauté 30–45 seconds until fragrant. Remove from heat and let cool 3–5 minutes.

Soak crumbs
In a small bowl, combine 3/4 cup bread crumbs and 1/4 cup whole milk. Let sit 2–3 minutes until the crumbs absorb the milk and become a cohesive mixture.

Mix meatloaf
In a large bowl add 1.25 lb lean ground turkey, the soaked bread crumbs, the cooled sautéed onion and garlic, 1 large egg, 1/4 cup chopped fresh parsley, 1 tablespoon Worcestershire sauce, 1 teaspoon Dijon mustard, 1.25 teaspoons kosher salt, 3/4 teaspoon freshly ground black pepper, and 1/2 teaspoon dried thyme. Using clean hands or a sturdy spoon, gently combine until just incorporated — do not overwork the meat, about 30–60 seconds of mixing. The mixture should be moist and hold together; if it feels too wet, add up to 2 tablespoons more breadcrumbs.

Shape meatloaf
Transfer the mixture to the prepared baking sheet or loaf pan. Shape into a loaf roughly 9x5 inches if using a baking sheet, or press evenly into the loaf pan. Smooth the top with a spatula or wet hands.
Glaze

Make glaze
In a small bowl, whisk together 1/2 cup ketchup, 2 tablespoons packed brown sugar, 1 tablespoon apple cider vinegar, 1/2 teaspoon Worcestershire sauce, and 1/2 teaspoon hot sauce (optional) until smooth and well combined.

Apply glaze
Brush about half of the glaze evenly over the top of the shaped loaf, leaving some glaze to apply later.
Bake and finish

Bake meatloaf
Place the meatloaf in the preheated 375°F (190°C) oven. Bake uncovered for 35 minutes.

Add remaining glaze
After 35 minutes, remove the meatloaf from the oven. Brush the remaining glaze over the top and sides. Return to oven and continue baking another 10–15 minutes, or until an instant-read thermometer inserted into the center reads 165°F (74°C). Total bake time typically 45–50 minutes depending on oven and loaf shape.

Rest
Remove the meatloaf from the oven and let it rest 10 minutes before slicing. Resting helps the loaf hold together and finish cooking gently.
