Method

    Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats. Position racks in the middle and upper-middle of the oven to allow even baking.

    In a large mixing bowl, using a hand mixer or stand mixer fitted with the paddle, cream the softened butter, granulated sugar, and light brown sugar together on medium speed for 2–3 minutes until light and fluffy and slightly paler in color. Scrape down the bowl as needed.

    Add the large egg and vanilla extract to the creamed mixture. Beat on medium speed until fully incorporated, about 30–45 seconds.

    In a separate medium bowl, whisk together the all-purpose flour, baking soda, and fine salt until evenly distributed.

    On low speed, add the dry ingredients to the wet mixture in two additions, mixing just until combined and no flour streaks remain. Do not overmix—stop as soon as the dough comes together.

    Using a spatula, fold in the semisweet chocolate chips and, if using, the chopped walnuts or pecans until evenly distributed throughout the dough.

    For thicker, chewier cookies, cover the bowl and chill the dough in the refrigerator for 30–60 minutes. If short on time, you may bake immediately (cookies will spread a bit more).

Shaping & Baking

    Use a 1.5-tablespoon cookie scoop (or a heaping tablespoon) to portion dough into uniform balls (~24 cookies). Place dough balls on the prepared baking sheets spaced about 2 inches (5 cm) apart to allow for spreading.

    If desired, gently press 1–2 extra chocolate chips into the top of each dough ball and sprinkle a tiny pinch of coarse sea salt on each cookie. Bake one sheet at a time in the preheated 350°F (175°C) oven for 9–11 minutes, or until edges are lightly golden and centers still look slightly soft. Rotate the pan halfway through baking for even color.

    Remove the baking sheet from the oven and allow cookies to cool on the sheet for 3–5 minutes so they set, then transfer cookies to a wire rack to cool completely.
