Prepare Ginger-Mint Syrup
In a small saucepan, combine the fresh mint leaves, sliced ginger, sugar, and water. Bring to a boil over medium heat, stirring until the sugar dissolves. Reduce heat and let it simmer for 10 minutes. Remove from heat and let it cool. Strain the syrup into a jar, discarding the solids.

Mix the Drink
In a shaker, combine the Cowichan gin, fresh lime juice, and ginger-mint syrup. Fill the shaker with ice and shake well until chilled. Strain the mixture into a glass filled with ice cubes. Top with soda water and gently stir. Garnish with a lime wedge and mint sprig.
