Pickling Vegetables

Smoked Tonatto Sauce

Method

Pickling Process

  1. 1

    Prepare the Vegetables

Wash and cut the cucumbers, carrots, radishes, and cauliflower into bite-sized pieces. Thinly slice the red onion.

  2. 2

    Make the Brine

In a saucepan, combine water, white vinegar, sugar, salt, mustard seeds, black peppercorns, and garlic cloves. Bring to a boil, stirring until sugar and salt dissolve.

  3. 3

    Pickle the Vegetables

Place the prepared vegetables and sliced red onion into a clean jar. Pour the hot brine over the vegetables, ensuring they are fully submerged. Let cool to room temperature, then refrigerate for at least 24 hours before serving.

Smoked Tonatto Sauce Preparation

  1. 4

    Blend the Sauce

In a blender, combine canned tuna, mayonnaise, capers, smoked paprika, lemon juice, and garlic clove. Blend until smooth and creamy. Adjust seasoning to taste.
