Cook the Steak
In a skillet over medium-high heat, heat 1 tablespoon of olive oil. Add the steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from the skillet and let rest for a few minutes before slicing thinly.

Sauté the Onions
In the same skillet, add the remaining tablespoon of olive oil. Slice the onion and add it to the skillet. Sauté until the onions are soft and caramelized, about 8-10 minutes.

Prepare the Au Jus
In a small saucepan, heat the beef broth over medium heat until warm. This will be used for dipping.

Assemble the Sandwiches
Slice the hoagie rolls in half. Layer the sliced steak, sautéed onions, and provolone cheese on the bottom half of each roll. Place under the broiler for a couple of minutes until the cheese melts.

Serve
Serve the sandwiches hot with a side of warm au jus for dipping.
