Fried Zucchini Tower

Prepare the Zucchini
Wash the zucchini and slice them into 1/4 inch thick rounds. Pat them dry with a paper towel.

Make the Tempura Batter
In a large bowl, mix together the all-purpose flour, cornstarch, grated Parmesan cheese, garlic powder, baking powder, salt, and black pepper. Gradually whisk in the cold water until the batter is smooth and well combined.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Zucchini
Dip each zucchini slice in the tempura batter, allowing the excess to drip off. Carefully place the battered zucchini into the hot oil. Fry in batches until golden brown and crispy, about 2-3 minutes per side. Use a slotted spoon to remove them and drain on paper towels.

Assemble the Tower
Stack the fried zucchini slices in a tower shape on a serving platter. Drizzle with extra Parmesan cheese if desired.

Serve with Marinara
Serve the Fried Zucchini Tower hot with marinara sauce on the side for dipping.
