Bring a large pot of salted water to a boil. Add the sourdough rigatoni and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

Prepare the Sauce
In a large skillet, heat olive oil over medium heat. Add the chopped bacon and cook until crispy. Add the onion and garlic, cooking until softened.

Add Meat and Spices
Stir in the ground beef and cook until browned. Add the chopped red chili pepper, crushed tomatoes, salt, and black pepper. Simmer for about 15-20 minutes, allowing flavors to meld.

Combine Pasta and Sauce
Add the cooked rigatoni to the sauce, mixing well. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Plate the pasta, sprinkle with grated Parmigiano Reggiano, and garnish with fresh basil. Enjoy!
