Method

Pasta Preparation

  1. 1

    Cook the Linguine

In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente, usually around 8-10 minutes. Reserve 1 cup of pasta water, then drain the pasta.

Sauce Preparation

  1. 2

    Cook the Bacon and Peas

In a large skillet over medium heat, add the bacon and cook until crispy, about 5-7 minutes. Add the frozen peas and cook for an additional 2-3 minutes until heated through.

  2. 3

    Mix the Cream and Parmesan

In a bowl, whisk together the heavy cream, grated Parmesan cheese, and black pepper. Set aside.

  3. 4

    Combine Eggs

In another bowl, whisk the eggs until well combined. Gradually stir in the cream and cheese mixture.

Combining Ingredients

  1. 5

    Combine Pasta and Sauce

Add the drained linguine to the skillet with the bacon and peas. Pour the cream and cheese mixture over the pasta, and toss to combine. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is achieved. Remove from heat.

  2. 6

    Add Prosciutto

Finally, add the Prosciutto di Parma, folding it gently into the pasta. Serve immediately with additional Parmesan if desired.
