    Prepare the tuna

    Pat the ahi tuna loin very dry with paper towels. Trim any sinew and shape into a neat rectangular log if needed. Season all sides lightly with kosher salt and freshly ground black pepper.

    Heat the pan

    Place a heavy skillet or cast-iron pan over high heat and let it get smoking hot, about 3–4 minutes. Add the neutral oil and swirl to coat; the oil should shimmer immediately.

    Sear the tuna

    Carefully place the tuna in the hot pan. Sear each of the four long sides for about 20–30 seconds per side, using tongs to rotate, until a thin browned crust forms but the center remains rare. Total sear time should be about 1.5–2 minutes. Do not overcook—tataki is almost raw inside.

    Cool and rest

    Transfer the seared tuna to a plate and let rest 3–5 minutes so juices redistribute. You may briefly place it in the refrigerator (5–10 minutes) to firm up for easier slicing.

    Slice

    Using a very sharp knife, slice the tuna across the grain into 1/4-inch (6 mm) thick slices. Wipe the knife between cuts for clean edges.

Sesame Soy Sauce

    Combine soy sauce, rice vinegar, mirin, sesame oil, grated ginger, minced garlic, and brown sugar (or honey) in a small bowl. Whisk until the sugar dissolves. Taste and adjust—add chili flakes for heat if desired. If you prefer a slightly thicker sauce, warm the mixture briefly in a small saucepan over low heat until the sugar dissolves completely, then cool.

    Reserve 1–2 tablespoons of the sauce for drizzling on the plated tuna and use the rest as a dipping sauce. If the sauce tastes too salty, add a squeeze of lime or a teaspoon of water to balance.

Garnish & Finish

    Toast sesame seeds in a dry skillet over medium heat, stirring constantly, until fragrant and lightly golden, about 2–3 minutes. Remove from heat immediately to avoid burning.

    Arrange tuna slices on a serving platter or individual plates. Drizzle reserved sesame soy sauce lightly over the slices and place the remaining sauce in a small bowl for dipping.

    Scatter toasted white and black sesame seeds over the tuna. Sprinkle thinly sliced scallions over the top, add microgreens or cilantro if using, and serve with lime or lemon wedges on the side.

    Serve immediately while the seared edges are warm. Enjoy with steamed rice, pickled ginger, or a light salad if desired.
