Marinate the Chicken
In a large bowl, combine buttermilk, hot sauce, salt, and black pepper. Add the chicken pieces and ensure they are fully submerged. Cover and refrigerate for at least 4 hours or overnight for best results.

Prepare for Frying
In a large, heavy pot or deep fryer, heat enough oil to submerge the chicken pieces (about 3-4 inches deep) to 350°F (175°C).

Dredge the Chicken
Remove the chicken from the marinade, allowing excess buttermilk to drip off. Dredge each piece in seasoned flour (salt and pepper mixed with all-purpose flour) to coat thoroughly.

Fry the Chicken
Carefully place the coated chicken pieces in the hot oil, being careful not to overcrowd the pot. Fry for about 12-15 minutes on each side or until golden brown and cooked through (internal temperature of 165°F/74°C).

Drain and Serve
Remove the chicken from the oil and place on a wire rack or paper towel-lined plate to drain excess oil. Serve hot and enjoy!
