    Prepare the Potatoes

    Peel the Russet potatoes and cut them into even sticks, about 1/4 inch wide.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    Drain the water and pat the potato sticks dry with a clean kitchen towel.

    Heat the Oil

    In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add a batch of the dried potato sticks to the hot oil. Fry them for about 5-7 minutes or until they are golden and crispy.

    Drain and Season

    Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. Sprinkle with salt to taste while still hot.
