    Prepare the Potatoes

    Dice the potatoes and boil them in salted water until tender, about 10 minutes. Drain and set aside.

    Cook the Breakfast Potatoes

    In a skillet, add 1 tablespoon of butter over medium heat. Add the boiled potatoes and season with salt and pepper. Cook until golden brown and crispy, about 5-7 minutes. Set aside.

    Cook the Bacon or Sausage

    In the same skillet, add the bacon or sausage links. Cook according to package instructions until crispy and cooked through. Remove and set aside.

    Make the Pancake

    In a bowl, combine pancake mix, milk, and 1 tablespoon of melted butter. Stir until just combined. Heat a non-stick skillet over medium heat. Pour batter onto the skillet and cook until bubbles form, then flip and cook until golden brown. Keep warm.

    Cook the Eggs

    In the same skillet, add remaining butter. Crack in the eggs and cook to your desired doneness (sunny-side up, over-easy, etc.). Season with salt and pepper.

    Toast the Bread

    Toast the bread slices until golden brown.

    Serve

    On a plate, serve the cooked eggs, crispy bacon or sausage, breakfast potatoes, pancake, and toast. Enjoy your Big Easy breakfast!
