    Prepare the Steak

    In a small bowl, mix together the paprika, garlic powder, onion powder, salt, and black pepper. Rub the spice mixture all over the flat iron steak. Drizzle with olive oil and let it marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.

    Prepare the Fries

    Preheat the oven to 425°F (220°C). Cut the potatoes into thin strips to make fries. Toss them in a bowl with olive oil, salt, and half of the grated Parmesan cheese. Spread them out on a baking sheet in a single layer and bake for about 25-30 minutes, flipping halfway through, until golden brown and crispy. Remove from the oven and sprinkle with the remaining Parmesan cheese.

    Cook the Steak

    Heat a cast-iron skillet or grill pan over medium-high heat. Once hot, add the marinated steak and cook for 4-5 minutes on each side for medium-rare, or until the internal temperature reaches 130°F (54°C). Let the steak rest for 5 minutes before slicing.

    Serve

    Slice the steak against the grain and serve it alongside the parmesan steak fries. Drizzle with house-made steak sauce and serve garlic aioli on the side.
