Prepare the Jasmine Rice
Rinse the jasmine rice under cold water, then add it to a pot with 2 cups of water. Bring to a boil, reduce the heat, cover, and let simmer for about 15 minutes until the water is absorbed. Fluff with a fork and set aside.

Cook the Shrimp
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Stir Fry the Vegetables
In the same skillet, add the remaining tablespoon of sesame oil. Add the garlic, ginger, bell pepper, broccoli, carrot, and snap peas. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.

Combine and Add Sauce
Return the shrimp to the skillet with the vegetables. Pour in the soy sauce and toss everything together. Cook for an additional 2 minutes to heat through. Season with salt and pepper to taste.

Serve
Serve the shrimp stir fry over the jasmine rice. Garnish with chopped green onions and toasted sesame seeds.
