    Prepare the Potatoes

    Wash and peel the Russet potatoes. Using a sharp knife, cut them into thin slices (about 1/8 inch thick). Rinse the potato slices in cold water to remove excess starch, then soak them in cold water for at least 30 minutes.

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a thermometer to check the temperature.

    Fry the Chips

    Remove the potato slices from the water and pat them dry with paper towels. Carefully add a handful of potato slices to the hot oil, making sure not to overcrowd the pot. Fry until golden brown, about 3-5 minutes, stirring occasionally.

    Drain and Season

    Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle with sea salt, paprika, garlic powder, and black pepper to taste.

    Serve

    Repeat the frying process with the remaining potato slices. Serve the seasoned potato chips warm as a snack or appetizer.
