In a large mixing bowl, combine the gluten-free all-purpose flour, baking powder, baking soda, salt, and sugar. Whisk together until well combined.

In a separate bowl, whisk together the almond milk, apple cider vinegar, egg, and melted coconut oil until smooth.

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.

Preheat Cooking Surface
Heat a non-stick skillet or griddle over medium heat. Lightly grease with oil if necessary.

Using a 1/4 cup measuring cup, pour batter onto the heated skillet. Cook for about 4-5 minutes on one side until bubbles form on the surface, then flip and cook for an additional 3-4 minutes until golden brown.
