Fried Green Tomato Benedict

Method

Preparation Steps

  1. 1

    Prepare the Fried Green Tomatoes

Dredge the green tomato slices in flour, then dip in beaten egg, and finally coat with cornmeal. Heat oil in a skillet over medium heat and fry the tomatoes until golden brown on both sides. Season with salt and pepper.

  2. 2

    Poach the Eggs

In a saucepan, bring water and vinegar to a gentle simmer. Crack each egg into a small bowl, then gently slide into the simmering water. Poach for about 3-4 minutes or until the whites are set but the yolks are still runny. Remove with a slotted spoon.

  3. 3

    Make Sriracha Hollandaise Sauce

In a bowl, melt the butter and allow to cool slightly. In a separate bowl, whisk the egg yolks and add melted butter, sriracha, and a pinch of salt. Whisk until combined and creamy.

  4. 4

    Toast the English Muffins

Toast the English muffin halves until golden brown.

  5. 5

    Prepare Breakfast Potatoes

Cook the breakfast potatoes by boiling or frying until golden and crispy. Season with salt and pepper.

  6. 6

    Assemble the Dish

On each toasted English muffin half, layer the fried green tomatoes, top with a poached egg, and drizzle with sriracha hollandaise sauce. Serve with breakfast potatoes on the side.
