Filet Mignon

    Prepare the Steak

    Season the filet mignon with salt and black pepper on both sides.

    Sear the Steak

    Heat olive oil in a skillet over high heat. Add the steak and sear for 4-5 minutes on each side for medium-rare. Adjust cooking time for desired doneness.

    Rest the Steak

    Remove the steak from the skillet and let it rest for 5 minutes before slicing.

Cabernet Demi Glace

    Sauté Shallots

    In the same skillet used for the steak, add minced shallots and sauté until soft.

    Deglaze the Pan

    Pour in the Cabernet Sauvignon and scrape up any browned bits. Let it simmer for 3-4 minutes.

    Add Beef Stock

    Add beef stock and reduce until thickened, about 10-15 minutes. Stir in butter before serving.

Homestyle Mashed Potatoes

    Boil Potatoes

    Place cubed potatoes in a pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.

    Mash Potatoes

    Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and pepper. Mash until creamy and smooth.

Asparagus

    Prepare Asparagus

    Toss asparagus with olive oil, salt, and pepper.

    Roast Asparagus

    Spread asparagus on a baking sheet and roast in the oven at 400°F (200°C) for 15-20 minutes until tender.
