Prepare the Brussels Sprouts
Preheat the oven to 400°F (200°C). Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut them in half lengthwise.

Roast the Brussels Sprouts
In a bowl, toss the Brussels sprouts with olive oil and smoked sea salt. Spread them out in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until they are crispy and golden brown, stirring halfway through.

Make the Goat Cheese Foam
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and crumble in the goat cheese, stirring until melted and smooth. Use an immersion blender to blend the mixture until frothy. Season with black pepper to taste.

Plate the Dish
Once the Brussels sprouts are done roasting, remove them from the oven. Drizzle pomegranate molasses over the top. Serve warm, with a dollop of goat cheese foam on each plate.
