    Chill glass (optional)

    If desired, place a highball or Collins glass in the freezer for 5–10 minutes or fill it with ice water for 2–3 minutes, then discard the water. Chilling keeps the drink fizzy longer.

    Fill the chilled glass with about 1 cup of ice cubes. Use large clear cubes if available; they melt slower and preserve carbonation.

    Run a lime wedge around the rim of the glass to impart a hint of citrus, then drop the wedge into the glass. If using, set a lime wheel or twist aside for garnish.

Beverage

    Open a chilled 12 fl oz bottle or can of Topo Chico carefully to preserve carbonation.

    Tilt the glass slightly and slowly pour the Topo Chico down the side of the glass onto the ice to maintain as much effervescence as possible.

    Give the drink one gentle stir with a bar spoon or straw (1–2 turns) to integrate the citrus from the lime wedge without flattening the bubbles.

    Garnish with the lime wheel or twist on the rim if desired, taste, and add an extra squeeze of lime to taste for more brightness.
