    Prepare and Sanitize

    Thoroughly sanitize all fermentation equipment (carboy, airlock, siphon, spoons, funnel). Cleanliness prevents off-flavors and contamination.

    Pour the fresh-pressed sweet apple cider into a sanitized 3 L glass carboy or fermenter. Leave about 10–15% headspace for krausen and CO2 development.

    If you want to increase alcohol slightly or balance sweetness, add the optional hard apple cider now and gently mix. This recipe assumes starting volume ~2.4 L after blending.

    Measure specific gravity if you have a hydrometer. Typical starting gravity for this blend should be around 1.050–1.060. Record the value for later ABV calculation.

    If using dry yeast, rehydrate per manufacturer instructions (usually in 10–20 ml of warm water at 35–40°C with a pinch of yeast nutrient if available). Once ready, pitch the yeast into the cider and fit the airlock.

Fruit & Aromatics

    Prepare the pear: wash, core, and quarter. Lightly bruise the ginger and put both pear quarters and ginger in a sanitized muslin bag or nylon hop bag to ease removal later.

    Zest the orange, avoiding the bitter white pith. Add the orange zest and the muslin bag containing pear and ginger directly into the fermenter after pitching yeast so flavors infuse during primary fermentation.

    Allow primary fermentation to proceed at a controlled temperature (15–20°C) for 5–10 days. Monitor bubbling in the airlock and check specific gravity after 5 days. The aromatics will meld into the cider during this period.

Spice & Balance

    After primary fermentation has slowed (airlock activity reduced and gravity falling toward expected endpoint), taste a small sample to evaluate sweetness, acidity and spice character.

    Dissolve the brown sugar in a small amount of warm filtered water and cool. If you want higher ABV or a touch more body, add the dissolved brown sugar to the fermenter now and gently mix. Measure gravity after adding to know final potential.

    If cider tastes flat or lacks brightness, add the acid blend in 1/4 tsp increments, stirring gently and tasting between additions until you reach a pleasant fresh-tart balance. Typical total for this batch is ~1 tsp but adjust to taste.

    Allow the cider to continue fermenting for another 5–7 days until gravity stabilizes over 48 hours. If you plan to backsweeten and stabilize, proceed to the stabilization step below.

Finishing & Carbonation

    When fermentation is complete and gravity is stable, rack (siphon) the cider into a sanitized secondary carboy, leaving sediment (lees) behind. Top up with filtered water if necessary to minimize oxygen contact but avoid overfilling.

    If you want to preserve current sweetness and prevent refermentation when backsweetening, first add crushed campden (sulfite) at the recommended dose and wait 24 hours, then add potassium sorbate. Note: sulfites do not stop yeast; potassium sorbate prevents yeast from reproducing so that stabilization is effective. Use these only if you plan to sweeten before bottling.

    For a lightly carbonated, table-cider finish: dissolve the priming sugar in 20–30 ml boiling water, cool, then gently stir into the racked cider. Bottle into sanitized bottles, leaving appropriate headspace, cap or cork, and store at 18–20°C for 10–14 days for carbonation to develop.

    Alternatively, keg and force-carbonate to ~2.2–2.8 volumes CO2 for a spritzy finish similar to many commercial ciders.

    Condition bottles for at least 1–2 weeks, then chill before serving. Serve cold (6–8°C) to showcase the bright apple character with gentle pear and citrus notes.

    Before consuming long-term, check for off-aromas or unexpected re-fermentation. Properly stabilized and stored bottles can last several months; without chemical stabilization, keep refrigerated and consume within a month or two.
