Preparation and Cooking

Prepare the Skirt Steak

In a large bowl, mix olive oil, minced garlic, salt, and black pepper. Marinate the skirt steak in this mixture for at least 30 minutes.

Cook the Potatoes

Peel and cut the potatoes into halves or quarters. Boil them in salted water until fork-tender, then drain. In a skillet, melt butter and sauté the potatoes until browned and crispy.

Prepare the Russian Salad

Cook the frozen mixed vegetables according to package instructions. In a bowl, combine the cooked vegetables, peas, diced carrots, diced pickles, and mayonnaise. Mix well and refrigerate until serving.

Grill the Skirt Steak

Preheat the grill to medium-high heat. Grill the marinated skirt steak for about 4-5 minutes per side for medium-rare, or to your desired doneness. Let it rest for a few minutes before slicing.

Slice the skirt steak against the grain and serve it with chimichurri sauce, browned potatoes, and a portion of Russian salad on the side.
