Hummus Base

Charred Sweet Onion

Pine Nuts

Lavash

Method

Hummus Preparation

  1. 1

    Prepare the Hummus Base

In a food processor, add the canned chickpeas (drained and rinsed), tahini, garlic cloves, lemon juice, olive oil, cumin, salt, and water. Blend until smooth, scraping down the sides as needed. Adjust seasoning with more salt or lemon juice to taste.

Charred Sweet Onion

  1. 2

    Char the Sweet Onion

Preheat your wood-fired grill or oven. Slice the sweet onion into thick rounds and brush both sides with olive oil and sprinkle with salt. Place on the grill or in the oven until charred and softened, about 10-15 minutes. Remove and let cool, then chop into smaller pieces.

Toasting Pine Nuts

  1. 3

    Toast the Pine Nuts

In a dry skillet over medium heat, add the pine nuts. Toast, stirring frequently, until golden and fragrant, about 3-5 minutes. Be careful not to burn them. Remove from heat and let cool.

Serving

  1. 4

    Assemble and Serve

Spread the prepared hummus in a shallow bowl. Top with the charred sweet onion pieces and toasted pine nuts. Serve with lavash bread on the side for dipping.
