Preparing the Tartlet Base

Preheat the Oven
Preheat your oven to 200°C (400°F).

Prepare Puff Pastry
Lightly flour a clean surface with all-purpose flour. Roll out the puff pastry sheet until it's about 1/8 inch thick. Cut the pastry into circles that fit your tartlet molds.

Line Tartlet Molds
Gently press the puff pastry circles into the tartlet molds. Prick the base with a fork to prevent bubbling during baking.
Making the Filling

Prepare Goat Cheese
In a mixing bowl, crumble the goat cheese and mix it with olive oil, salt, and black pepper until smooth.

Prepare Tomatoes
Halve the cherry tomatoes and add them to the goat cheese mixture. Fold in the fresh basil leaves gently.
Assembling and Baking

Fill Tartlets
Spoon the goat cheese and tomato mixture into each tartlet mold, filling them generously.

Bake the Tartlets
Place the filled tartlet molds in the preheated oven and bake for 20-25 minutes, or until the pastry is golden brown and crisp.

While the tartlets are baking, toss the arugula with balsamic glaze in a mixing bowl.

Once the tartlets are baked, allow them to cool slightly before removing them from the molds. Serve warm alongside the arugula salad.
