Preparation of Diavolo Sauce

    Sauté the Garlic

    In a medium-sized skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

    Add the Spices

    Stir in the crushed red pepper flakes, and cook for another 30 seconds to release their flavor.

    Incorporate the Tomatoes

    Add the canned crushed tomatoes, dried oregano, salt, and black pepper. Stir to combine, and let the sauce simmer for about 10 minutes, allowing the flavors to meld.

Cooking the Shrimp

    Cook the Shrimp

    Increase the heat to medium-high and add the peeled and deveined shrimp to the sauce. Cook for about 3-5 minutes until the shrimp are pink and cooked through.

    Add Pernod

    Pour in the Pernod and let it simmer for an additional 2 minutes to infuse the flavors.

    Add Feta

    Sprinkle the crumbled feta cheese over the shrimp and sauce. Cover the skillet and let it cook for another 2 minutes until the cheese is slightly melted.

Serving

    Remove the skillet from heat. Garnish the dish with chopped fresh parsley and serve with lemon wedges on the side.
