Prepare the Fruit
Wash and chop the fresh fruit into smaller pieces. If using strawberries, remove the green tops.

Make the Fruit Puree
In a blender, combine the chopped fruit, granulated sugar, and lemon juice. Blend until smooth.

Combine with Water
In a saucepan, bring the water to a boil and then remove from heat. Stir in the fruit puree until well combined.

Chill the Mixture
Allow the mixture to cool to room temperature, then refrigerate for at least 2 hours until thoroughly chilled.

Churn the Sorbet
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Freeze the Sorbet
Transfer the sorbet to an airtight container and freeze for at least 4 hours before serving.

Prepare the Base
In a medium saucepan, combine the milk, heavy cream, and half of the sugar (60 grams). Heat over medium heat until it just begins to simmer.

Cook the Mixture
Return the tempered mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon (about 10 minutes). Do not let it boil.

Cool and Flavor
Remove from heat and stir in the vanilla extract. Allow it to cool to room temperature, then refrigerate until completely chilled (about 2 hours).
