Pork Belly

Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Score the skin of the pork belly in a crisscross pattern, being careful not to cut into the meat. Season the pork belly generously with salt and black pepper.

Sear the Pork Belly
In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the pork belly skin-side down and sear for 5-7 minutes until the skin is crispy. Flip and sear the other side for another 5 minutes.

Bake the Pork Belly
Transfer the skillet to the preheated oven and bake for about 2.5 to 3 hours, until the pork belly is tender.
Jack & Coke Glaze

Make the Glaze
In a saucepan, combine the Coca-Cola, Jack Daniel's whiskey, brown sugar, soy sauce, minced garlic, and grated ginger. Bring to a boil over medium heat, then reduce to a simmer and cook for about 15-20 minutes, until the glaze thickens.

Glaze the Pork Belly
During the last 30 minutes of cooking the pork belly, brush the Jack & Coke glaze over the pork. Repeat every 10 minutes to build a nice glaze.
