Chicken Liver Pâté

Prepare the Chicken Livers
Rinse the chicken livers under cold water and remove any visible fat or connective tissue.

Cook Chicken Livers
Increase the heat to medium-high. Add the chicken livers to the skillet and cook for about 5-7 minutes, stirring occasionally, until they are browned on the outside and still slightly pink in the center.

Deglaze with Cognac
Add the cognac to the skillet, scraping the bottom to deglaze. Allow the mixture to simmer for another 2-3 minutes until the cognac has reduced.

Blend the Mixture
Transfer the liver mixture to a food processor. Add the remaining butter, thyme, heavy cream, salt, and pepper. Blend until smooth and creamy.

Chill the Pâté
Transfer the pâté to a serving dish or individual ramekins. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.

Pickle the Vegetables
Place the sliced vegetables in a jar or container. Pour the hot pickling liquid over the vegetables, making sure they are fully submerged. Let cool to room temperature, then refrigerate for at least 24 hours before serving.

Slice the Ciabatta
Slice the ciabatta bread into thick slices.

Serve the chilled chicken liver pâté with the pickled vegetables, ciabatta slices, and a drizzle of honey on the side.
