Method

Preparation

1

Prepare the Vegetables

Wash and peel the russet potatoes. Cut them into 1/2-inch cubes and place them in a large bowl. Dice the red and green bell peppers and onion, then add them to the bowl with the potatoes.

Cooking

2

Sauté the Potatoes

In a large skillet, heat the olive oil over medium heat. Once hot, add the cubed potatoes to the skillet. Cook for about 15 minutes, stirring occasionally, until the potatoes start to become golden brown.

3

Add the Vegetables

Add the diced bell peppers and onion to the skillet with the potatoes. Stir well to combine. Cook for another 10-12 minutes until the vegetables are tender and the potatoes are cooked through.

4

Season the Mixture

Sprinkle the garlic powder, paprika, salt, black pepper, and dried parsley over the potato and vegetable mixture. Stir well to ensure the seasonings are evenly distributed. Cook for an additional 2-3 minutes.

Serving

5

Serve the Breakfast Potatoes

Remove the skillet from heat and let cool slightly. Serve the breakfast potatoes warm, garnished with additional parsley if desired.
