Braised Lamb Shank

Prepare the Lamb
Preheat your oven to 325°F (160°C). In a large Dutch oven, heat the olive oil over medium-high heat. Season the lamb shanks with salt and pepper.

Sear the Lamb
Add the lamb shanks to the pot and sear them on all sides until browned, about 8-10 minutes. Remove the shanks and set aside.

Add Broth and Seasonings
Return the lamb shanks to the pot, along with the broth, tomato paste, bay leaves, and thyme. Bring to a simmer.

Braise the Lamb
Cover the pot and transfer it to the preheated oven. Braise for 2.5 to 3 hours, until the lamb is tender and falls off the bone.
Saffron Orange Basmati Rice

Rinse the Rice
Rinse the basmati rice under cold water until the water runs clear to remove excess starch.

Prepare Saffron Water
In a small bowl, soak the saffron threads in 2 tablespoons of warm water for 10 minutes.

Cook the Rice
In a medium pot, combine the rinsed rice, water, saffron water (including threads), orange zest, and salt. Bring to a boil.

Simmer the Rice
Reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the water is absorbed. Fluff with a fork.

Add Tomatoes
Stir in the canned diced tomatoes, along with salt and pepper. Let the mixture simmer for 10-15 minutes until thickened.
