Method

Chicken Marinade

    Prepare the Marinade

    In a large bowl, mix together olive oil, ground cumin, ground coriander, paprika, saffron threads, minced garlic, salt, black pepper, and orange juice.

    Marinate the Chicken

    Add the Bell & Evans chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.

    Rinse the Rice

    In a fine mesh strainer, rinse the basmati rice under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a large pot, combine the rinsed basmati rice, water, saffron threads, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the water has been absorbed.

    Add Flavor

    Once cooked, remove from heat and stir in orange zest and butter. Fluff the rice with a fork and cover to keep warm.

    Prepare the Toppings

    In a small bowl, mix together slivered almonds and raisins. Set aside.

Tzatziki Sauce

    Make the Tzatziki

    In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, chopped dill, and salt to taste. Mix well and refrigerate until ready to serve.

Cooking the Chicken

    Cook the Chicken

    Preheat your grill or skillet over medium-high heat. Remove the chicken from the marinade and grill or cook for about 5-7 minutes on each side, or until the chicken reaches an internal temperature of 165°F (75°C).
