Prepare the Bananas
Peel the bananas and cut them in half lengthwise. Then cut each half into two pieces to create quarters.

Melt the Butter
In a large skillet, melt the unsalted butter over medium heat until it is completely melted and bubbly.

Add Brown Sugar and Cinnamon
Stir in the brown sugar and cinnamon, mixing well until the sugar has dissolved and the mixture is bubbling.

Cook the Bananas
Add the banana quarters to the skillet and cook for about 2 minutes on each side, or until they are tender and caramelized.

Flambé with Rum
Carefully add the dark rum to the skillet. Using a long lighter, ignite the rum (be cautious of flames). Allow the flames to subside as the alcohol burns off.

Serve the Dish
Scoop the vanilla gelato into serving bowls and spoon the warm banana foster mixture over the top. Serve immediately.
