Steak Preparation

    Season the Steak

    Sprinkle salt and black pepper evenly over the A-5 New York Strip Wagyu. Let it sit at room temperature for about 30 minutes before cooking.

    Sear the Steak

    In a cast-iron skillet, heat olive oil over medium-high heat. Once hot, add the steak and sear for 3-4 minutes on each side, or until it reaches your desired doneness. Remove from heat and let it rest for 5 minutes.

Caramelized Apples

    Cook the Apples

    In a skillet, melt butter over medium heat. Add the sliced apples, brown sugar, and cinnamon. Cook, stirring occasionally, for about 8-10 minutes until the apples are tender and caramelized. Set aside.

Glazed Carrots

    Prepare the Carrots

    In a saucepan, add sliced carrots and enough water to cover them. Boil for about 5 minutes until slightly tender, then drain.

    Glaze the Carrots

    In the same saucepan, add butter, honey, salt, and black pepper. Add the drained carrots back to the saucepan and toss to coat. Cook for an additional 5 minutes on medium heat until the carrots are glazed.

Duck Jus

    Make the Duck Jus

    In a saucepan, combine duck stock, red wine, finely chopped shallots, thyme, and salt. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until the sauce is reduced by half. Strain and set aside.

Blackberry Conserve

    Prepare the Conserve

    In a saucepan, combine blackberries, sugar, and lemon juice. Cook over medium heat for about 15-20 minutes until the mixture thickens. Allow to cool before serving.
