Season the Filet
Sprinkle the 8 oz center cut filet with 1 tsp salt and 1 tsp black pepper on both sides, ensuring even coverage.

Rest the Filet
Once cooked, remove the filet from the skillet and let it rest for at least 5 minutes before slicing.
Cognac Peppercorn Sauce Preparation

Sauté Shallots
In the same skillet used for the filet, add 1 tbs of finely chopped shallots. Sauté over medium heat until they are soft and translucent, about 2-3 minutes.

Incorporate Beef Broth
Pour in 1 cup of beef broth and bring the mixture to a simmer. Allow it to reduce slightly, about 4-5 minutes.

Add Cream
Stir in 1 cup of heavy cream and let it simmer for another 3-4 minutes until the sauce thickens. Season with salt to taste.

Serve
Slice the rested filet and plate it. Drizzle the cognac peppercorn sauce over the top before serving.
