Prep rolls
Preheat oven to 350°F (175°C). Using a sharp knife, slice each sub roll lengthwise without cutting all the way through so it can open like a book. Place rolls on a baking sheet, open-faced, and warm in the oven for 4–6 minutes until slightly toasted but still soft. Remove and set aside.

Make sandwich dressing
In a small bowl whisk together mayonnaise (1/2 cup), yellow mustard (2 tbs), olive oil (2 tbs), red wine vinegar (1 tbs), 1 tsp salt and 1/2 tsp black pepper until smooth and slightly emulsified. Taste and adjust seasoning. Reserve about 2 tbs of dressing per sandwich for spreading; keep remaining for drizzling.

Layer proteins and cheese
Open each warmed roll and lightly spread about 2 tbs of the dressing on both top and bottom halves. On the bottom half layer 2 slices provolone first (this helps keep veggies from making bread soggy), then arrange 2 slices ham, 2 slices turkey and 2 slices salami/pepperoni per sandwich, slightly overlapping for even coverage. If you prefer heated subs, place assembled sandwiches (open) under the broiler for 1–2 minutes just until cheese softens — watch closely to avoid burning.

Assemble vegetables and finish
On top of the meat and cheese, arrange 2–3 tomato slices, a few red onion rings, about 1/2 cup shredded lettuce, 2–3 dill pickle slices and 1–2 tbs banana peppers per sandwich. Season the vegetables lightly with the reserved 1/4 tsp salt and 1/4 tsp black pepper. Drizzle about 1–2 tbs of the remaining dressing or a little more olive oil and vinegar (if desired) over the veggies. Fold top of roll over and press gently. If desired, wrap sandwiches in foil and set on a warm plate for 3–5 minutes to allow flavors to meld before serving.
