Burger Patties

    Mix and Form

    Place the ground beef in a large bowl. Add kosher salt, black pepper, and Worcestershire sauce. Gently mix with your hands or a spatula until seasonings are evenly distributed — avoid overworking the meat to keep patties tender.

    Portion

    Divide the meat into 4 equal portions (about 6 oz / 170 g each). Lightly shape each portion into a round patty about 3/4 to 1 inch thick. Make a shallow dimple in the center of each patty with your thumb — this helps the patty cook evenly and prevents doming.

    Rest

    Place formed patties on a tray, cover loosely with plastic wrap, and refrigerate for 15–20 minutes to help them hold their shape (optional but recommended).

    Preheat & Cook

    Heat a heavy skillet, cast-iron griddle, or grill over medium-high heat. Add the vegetable oil and spread. When the surface is hot and shimmering, place the patties on the cooking surface, leaving space between them. Cook for 3–4 minutes without moving to develop a crust.

    Flip & Finish

    Flip the patties and cook for another 3–4 minutes for medium doneness. Adjust time for desired doneness: about 2–3 minutes per side for medium-rare, 4–5 minutes per side for well-done. In the last 1 minute of cooking, lay a slice of cheddar on each patty, cover the pan or close the grill to melt the cheese.

    Toast Buns

    While patties are resting after cooking, spread softened butter on the cut sides of the burger buns. Place them, butter-side down, on the skillet or griddle over medium heat and toast until golden brown, about 1–2 minutes. Remove from heat.

    Prepare Condiments

    Mix mayonnaise, ketchup, and mustard together in a small bowl (or keep separate if you prefer). Set aside. If using bacon, mushrooms, or other add-ins, ensure they are cooked and warmed now.

Assembly & Serving

    Assemble the burgers: spread the mayo-ketchup-mustard mix (or individual condiments) on the bottom bun. Place a lettuce leaf on the bun, add the cheese-topped patty, then tomato slices, red onion rings, and pickles. Add optional bacon or sautéed mushrooms if using. Cap with the top bun.

    Serve immediately with your choice of sides (fries, salad, or chips). Provide extra condiments on the side and enjoy.
