Prepare the Peas
Rinse and soak the Organic Sea Island Red Peas in water for 4-6 hours or overnight. Drain and rinse again. Cook the peas in boiling water until tender, about 30 minutes. Drain and let cool.

Make the Patty Mixture
In a mixing bowl, combine the cooked peas, breadcrumbs, minced garlic, cumin, salt, and black pepper. Mash the mixture until it forms a cohesive dough. Form into patties, about 1 inch thick.

Fry the Egg
In a non-stick skillet, add a little olive oil over medium heat. Crack the Local Farm Egg into the skillet and cook until the whites are set and the yolk is still runny, about 3-4 minutes. Remove from heat.

Assemble the Dish
On a plate, place a cooked veggie patty. Top with shredded lettuce, a sunny side up egg, heirloom smoked pickled onions, and drizzle with roasted garlic aioli. Serve immediately.
