Cook the Bacon
In a skillet over medium heat, cook the bacon slices until crispy, about 6-8 minutes. Flip halfway through for even cooking. Once cooked, remove the bacon and place on paper towels to drain excess fat.

Grill the Onions
In the same skillet, drain excess bacon fat, leaving about 1 tablespoon. Add the sliced large onion and cook over medium heat. Stir occasionally for about 10-15 minutes, until the onions are caramelized and golden brown.

Mix the Sauce
In a small bowl, combine Duke's mayonnaise with black pepper (if using). Mix well and set aside.

Prepare Additional Ingredients
If using, slice the tomato and wash the lettuce. Set aside for assembly.

Assemble the Dish
On a serving plate, layer the lettuce (if using), followed by the grilled onions. Break the crispy bacon slices and layer them on top of the onions. Crumble the blue cheese over the bacon and finish with a drizzle of the Duke's mayonnaise sauce. Add sliced tomatoes on the side if desired.
