    Thoroughly wash the Russet potatoes under cold running water to remove dirt. Peel the potatoes if desired, then cut them into even sticks about 1/4 inch thick.

    Soak Potatoes

    Place the cut potato sticks in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch, which helps to achieve crispy fries.

Cooking

    Heat Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C) over medium heat. Use a thermometer for accuracy.

    Dry Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture. This step is crucial for achieving crispiness.

    Fry Potatoes

    Carefully add the dried potato sticks to the hot oil in batches, ensuring not to overcrowd the pot. Fry them for about 5-7 minutes or until they turn golden brown and crispy.

    Drain and Season

    Using a slotted spoon, remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle with salt, pepper, garlic powder, and paprika to taste.
