    Peel the Russet potatoes and cut them into thin strips, about 1/4 inch thick. Soak the cut potatoes in water for at least 30 minutes to remove excess starch.

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel or paper towels. This step is crucial to achieve crispy fries.

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a thermometer for accuracy.
