Method

Preparing the Burger Patty

    Season the Bison

    In a mixing bowl, combine the ground bison with salt and black pepper. Mix gently until just combined to avoid overworking the meat.

    Form the Patty

    Shape the seasoned bison into a patty about 3/4 inch thick. Make a small indentation in the center of the patty to help it cook evenly.

Cooking the Burger

    Cook the Bacon

    In a skillet over medium heat, cook the heirloom smoked bacon until crispy. Remove from the skillet and drain on paper towels.

    Grill the Onion

    In the same skillet with the leftover bacon fat, add the sliced medium onion. Cook until caramelized and golden brown, about 5-7 minutes. Remove from heat.

    Grill the Patty

    Preheat the grill or a grill pan over medium-high heat. Cook the bison patty for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness.

    Melt the Cheese

    During the last minute of cooking, place a slice of white cheddar cheese on top of the patty and cover to melt.

Assembling the Burger

    Prepare the Roll

    Lightly toast the Vidalia onion roll on the grill or in a toaster until golden brown.

    Build the Burger

    On the bottom half of the toasted onion roll, place the bison patty with melted cheese, followed by the crispy bacon, grilled onions, and drizzle with whiskey BBQ sauce. Top with the other half of the roll.
