Stewed Pinto Beans

    Prepare the Beans

    Rinse the dried pinto beans and soak them in water overnight. Drain and rinse before cooking.

    Cook the Beans

    In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until softened. Add soaked beans, water, cumin, salt, and black pepper. Bring to a boil, then reduce heat to low and simmer for about 1.5 to 2 hours until beans are tender.

    Prepare the Cabbage

    Preheat the oven to 425°F (220°C). Place cabbage wedges on a baking sheet, drizzle with olive oil, and season with salt and pepper.

    Roast the Cabbage

    Roast in the preheated oven for 25-30 minutes, turning halfway through, until edges are crispy and browned.

Poached Egg

    Prepare to Poach

    In a saucepan, bring water and vinegar to a gentle simmer. Crack each egg into a small bowl.

    Poach the Eggs

    Create a gentle whirlpool in the water and slide the eggs in one at a time. Cook for 3-4 minutes or until whites are set and yolks are still runny. Remove with a slotted spoon.
