Main Ingredients

Method

Preparation

  1. 1

    Prepare the Lentils

Rinse the lentils under cold water. In a pot, combine the lentils with 3 cups of water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until tender. Season with salt and pepper to taste.

  2. 2

    Cook the Swiss Chard

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped Swiss chard and sauté for 3-4 minutes until wilted. Season with salt and pepper, then set aside.

  3. 3

    Prepare the Saffron Velouté

In a small saucepan, heat 1 tablespoon of olive oil over medium heat. Add the saffron threads and 1 cup of water. Simmer for 5 minutes, then whisk in 1 tablespoon of flour to thicken. Cook for an additional 2-3 minutes until velvety. Season with salt and pepper.

  4. 4

    Cook the Salmon

Rub the salmon fillets with za'atar, salt, and pepper. In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the salmon fillets and cook for 3-4 minutes on each side, or until cooked to your liking.

Assembly

  1. 5

    Plate the Dish

On each plate, create a bed of lentils, top with sautéed Swiss chard, and place the salmon fillet on top. Drizzle the saffron velouté around the plate, and garnish with pomegranate seeds and fresh mint.
